Black Raspberries (also known as Blackcaps) are a true raspberry with such high levels of red pigment that they appear black. They are so black in fact, that they are four times darker than the average blackberry. This makes them an excellent natural coloring ingredient .
Black Raspberries also posses a very pleasant and unique flavor that endears them as a flavoring agent in confections, juice drinks, and even beers.
We Individually Quick Freeze some Black Raspberries for confectioners each season, but the majority of these berries are processed into purees and juices.
